Our primary goal at TH10 is defending against two star attacks. We do occasionally see a three star on our bases but its so rare as to not be worth worrying too much about.
Being TH9, I've not really thought much about TH10 base design yet. The designs we currently have in use seem to do a good enough job.
Personally, I'd avoid two infernos set on single except on bases that are pretty much maxed on defence. Single infernos don't really do much against smaller troops, so a TH9 Giant-Wiz type attack can two star lower TH10s with two single infernos, so you need the other defences to be high level to have much chance of stopping these.
I'd try to keep access to the core as difficult as possible, with teslas and infernos either in the core or watching over it. Avoid clustering defences such that freeze spells can shut down too many defences at once (particularly two infernos, or an inferno and a few teslas).
Cores protected by a ring of junk buildings are worth looking at. Whilst there's plenty of stuff online about how to defeat them, I think they'll likely provide many opponents with problems. This sort of idea:
The ring of non-defensive buildings makes it difficult to get Golems to target anything inside the core, and thus cries of "nothing took the Jump" ensue. The typical solution appears to be to use six or seven golems (with wiz support) with two going in at the corners and heroes and golems/pekkas pushing in down the middle (the corner forces break the pathing round the ring, so the central force should head to the core). Four jumps and a rage is a common spell composition, but if you can get in with wall-breakers, I'd have thought freeze could be useful too, as the cores tend to be pretty densely packed with defences.
One final thought to bear in mind when building your core, is that the AQ can shoot buildings over walls if there is up to a 3x3 gap between the wall and the building. So she can shoot over a wall and a destroyed defence to the TH. She can't shoot over a 4x4 space. So a 12x12 inner core with TH central inside it can't be sniped by the AQ from the outside.
